  • 1/2 cup Pecans (chopped) or walnuts
For Garnish

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a large ovenproof skillet, heat olive oil and sear the chicken for about 5–7 minutes until golden brown.
  4. Add butter and sauté minced garlic until fragrant.
  5. Pour in apple cider and chicken broth, scraping any brown bits from the pan, and simmer for 2 minutes.
  6. Stir in Dijon mustard, thyme, and cinnamon, simmering for another 2 minutes.
  7. Add sweet potato cubes and apple slices into the skillet, tossing to coat well.
  8. Nestle the seared chicken among the vegetables.
  9. Sprinkle chopped pecans over the dish.
  10. Bake for 25-30 minutes until the chicken reaches an internal temperature of 165°F and potatoes are tender.
  11. Let the skillet rest for a few minutes before garnishing with parsley.
  12. Serve warm with sweet potatoes and apple slices.
