Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease two loaf pans with butter or non-stick spray.
  2. In a large mixing bowl, combine granulated sugar, brown sugar, eggs, oil, and vanilla extract. Whisk until light and airy, about 2-3 minutes.
  3. In a separate bowl, sift together all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg. Gradually add the dry mixture into the wet ingredients, stirring gently until just combined.
  4. Fold in the grated zucchini and diced apples using a spatula until evenly distributed.
  5. Divide the batter between the two greased loaf pans and smooth the tops.
  6. Bake for 35 minutes, then cover with aluminum foil to prevent over-browning. Bake for an additional 20-25 minutes until a toothpick comes out clean.
  7. Remove from oven and allow to cool in the pans for about 10 minutes before transferring to a wire rack.
