- Finely mince the shallot and garlic, and strip the thyme leaves from the stems.
- In a medium bowl, whisk together apple cider vinegar and maple syrup with Dijon and whole grain mustard until fully combined.
- Slowly drizzle in olive oil while whisking continuously to emulsify.
- Gently stir in minced shallot, garlic, and thyme. Add black pepper and salt to taste.
- Cover and let the dressing rest at room temperature for 30 minutes.
- Give the dressing a final whisk and adjust sweetness and saltiness as needed.
