Step-by-Step Instructions
  1. In a large pot, heat over medium heat and add the chopped bacon. Cook until crispy, about 5-7 minutes. Remove bacon and leave fat in pot.
  2. Add 2 tablespoons of butter or olive oil to the pot. Sauté diced onions and sliced carrots for about 10-15 minutes until tender.
  3. Pour in 4 cups of chicken broth and bring to a gentle boil, reduce to simmer and cook for 5 minutes.
  4. Stir in 1 cup of heavy cream or half-and-half, add spices and simmer for 5 minutes until slightly thickened.
  5. Gradually add 2 cups of shredded sharp cheddar cheese, stirring until melted.
  6. Gently stir in 1 pound of gnocchi and cook for 2 minutes until heated through. Add chopped bacon back to the pot.
