Ingredients

  • 1 cup unsweetened almond milk
  • 1 scoop chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons chia seeds
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • A pinch of salt

Method

  1. In a medium bowl, whisk together the almond milk, chocolate protein powder, cocoa powder, chia seeds, maple syrup, vanilla extract, and salt until well combined and smooth.
  2. Let the mixture sit for about 5 minutes to allow the chia seeds to absorb some liquid and thicken the pudding.
  3. After 5 minutes, whisk the mixture again to break up any clumps.
  4. Cover the bowl with plastic wrap or transfer the pudding to individual serving cups.
  5. Refrigerate for at least 1 hour to allow the pudding to set. For best results, chill for 2-3 hours or overnight.
  6. Serve chilled, topped with your favorite fruits, nuts, or a dollop of whipped cream if desired.
