Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe dish, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for about 3–5 minutes until soft and fragrant.
  3. Stir in sliced mushrooms, sauté for another 5 minutes until tender and browned.
  4. Pour in the arborio rice, stirring well to coat each grain with the mixture. Toast the rice for about 2–3 minutes.
  5. Pour in the vegetable or chicken broth. Bring to a gentle boil for about 1–2 minutes, stirring occasionally.
  6. Cover the dish tightly and place it in the preheated oven. Bake for 25 minutes.
  7. Remove from oven, stir in grated Parmesan cheese and chopped herbs.
