- Preheat your oven to 375°F (190°C).
- In a large oven-safe dish, heat olive oil over medium heat. Add diced onion and minced garlic, sauté for about 3–5 minutes until soft and fragrant.
- Stir in sliced mushrooms, sauté for another 5 minutes until tender and browned.
- Pour in the arborio rice, stirring well to coat each grain with the mixture. Toast the rice for about 2–3 minutes.
- Pour in the vegetable or chicken broth. Bring to a gentle boil for about 1–2 minutes, stirring occasionally.
- Cover the dish tightly and place it in the preheated oven. Bake for 25 minutes.
- Remove from oven, stir in grated Parmesan cheese and chopped herbs.
