  3. Add the eggs one at a time, then mix in the vanilla extract until just combined.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually mix this into the wet ingredients.
  5. Fold in chopped pistachios and white chocolate chips until evenly distributed.
  6. Scoop out dough portions and place them on the prepared baking sheets, spaced apart.
  7. Bake for 10–12 minutes until edges are golden and centers are soft.
  8. Cool on baking trays for about 5 minutes before transferring to a wire rack.
  9. Melt additional white chocolate and drizzle over cooled cookies; sprinkle with chopped pistachios.
