- Gather all ingredients including fresh salmon fillets, garlic, cherry tomatoes, spinach, heavy cream, chicken broth, Parmesan cheese, and seasonings.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat for about 2 minutes.
- Cook the seasoned salmon fillets skin-side down for 4-5 minutes until golden brown, then flip and cook for another 4-5 minutes.
- In the same skillet, reduce the heat to medium and sauté minced garlic for 1 minute until fragrant, then add halved cherry tomatoes and cook for 2-3 minutes.
- Stir in fresh spinach and cook for an additional 2 minutes until wilted.
- Pour in 1 cup of heavy cream and 1/2 cup of chicken broth, stirring and adding 1/3 cup of grated Parmesan cheese and Italian seasoning; simmer for 3-4 minutes.
- Return the cooked salmon to the skillet, spooning sauce over each fillet and simmer for an additional 2-3 minutes.
