Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and brush a cast iron skillet with olive oil.
  2. Drain a can of white beans, reserving 1/4 cup, and blend the rest with sour cream, salsa verde, garlic, lime juice, red pepper flakes, ground cumin, and salt until smooth.
  3. In a mixing bowl, fold in shredded chicken, sweet corn, minced cilantro, and 1 cup of cheese into the bean mixture.
  4. Spread the mixture into the skillet, top with reserved beans and diced red pepper, and drizzle with remaining salsa verde.
  5. Sprinkle remaining cheese over the top and bake for 20 minutes until bubbly.
  6. Broil for 2-3 minutes to achieve a golden-brown finish.
  7. Let it sit for a moment before serving warm with tortilla chips or vegetables.
