  • 1 packet Taco Seasoning or homemade with cumin, chili powder, garlic powder
  • 1 cup Red Enchilada Sauce green enchilada sauce can be swapped
For the Tacos
  • 2 cups Oaxaca Cheese or Mexican cheese/Monterey Jack
  • 6 pieces Corn Tortillas warm them to avoid cracking
  • 2 tablespoons Olive Oil can omit for a non-fried option

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) for perfect crunch.
  2. Brown the ground beef in a skillet over medium-high heat for about 5-7 minutes. Stir in taco seasoning and red enchilada sauce; simmer for 2-3 minutes.
  3. Wrap corn tortillas in a damp paper towel and microwave for 30-60 seconds to soften.
  4. Brush one side of each tortilla with olive oil and place them oiled side down on the baking sheet.
  5. On the un-oiled side, add 2 tablespoons of cheese, ¼ cup of beef mixture, and another 2 tablespoons of cheese before folding.
  6. Bake in the preheated oven for 16 minutes or until golden brown and crispy.
  7. Let the tacos cool for about 3 minutes before serving.
