  2. Pat the cod fillets dry. Season both sides with salt and black pepper. Arrange in the prepared baking dish.
  3. Melt 2 tablespoons of butter in a skillet over medium heat. Stir in panko breadcrumbs, parsley, garlic powder, and lemon zest until combined.
  4. Spread the panko mixture evenly over each cod fillet, pressing down gently.
  5. Drizzle lemon juice and olive oil over the cod.
  6. Bake for 12–15 minutes until the fish is opaque and flakes easily, and the topping is golden brown.
  7. Let the cod rest for about 2 minutes before serving.
