- Flatten the chicken breasts between two sheets of plastic wrap to about 1/2 inch thick, and sprinkle Cajun seasoning on both sides.
- In a bowl, mix 1 cup of mayonnaise, 2 minced garlic cloves, juice of half a lemon, and a pinch of salt to make the garlic aioli. Set aside.
- Heat 1/2 inch of vegetable oil in the skillet to 350°F (175°C), and fry the chicken for 4-5 minutes on each side until golden brown. Drain on paper towels.
