  • 2 pieces Chicken Breast boneless, skinless
  • 2 tablespoons Cajun Seasoning or homemade blend
  • 1/2 cup Oil for frying, vegetable or canola oil
For the Aioli
  • 1 cup Garlic Aioli may use store-bought mayo if needed
For the Assembly
  • 4 pieces Brioche Buns gluten-free buns can be used
  • 1 cup Romaine Lettuce or substitute with other greens
  • 1 piece Tomato or seasonal heirloom tomatoes

Method
 

Step-by-Step Instructions
  1. Flatten the chicken breasts between two sheets of plastic wrap to about 1/2 inch thick, and sprinkle Cajun seasoning on both sides.
  2. In a bowl, mix 1 cup of mayonnaise, 2 minced garlic cloves, juice of half a lemon, and a pinch of salt to make the garlic aioli. Set aside.
  3. Heat 1/2 inch of vegetable oil in the skillet to 350°F (175°C), and fry the chicken for 4-5 minutes on each side until golden brown. Drain on paper towels.
  4. Spread a layer of garlic aioli on the bottom half of each bun, add crispy chicken, romaine lettuce, and tomato slices, then top with the other half of the bun.
  5. Serve warm with extra garlic aioli for dipping and enjoy with sweet potato fries or salad.
