- Wash 2 medium zucchinis and grate them using a box grater. Place in a bowl, sprinkle with salt, and let sit for 10-15 minutes.
- Squeeze out the moisture from the zucchini and transfer to a clean mixing bowl.
- Add the egg, flour, Parmesan cheese, minced garlic, black pepper, and paprika to the zucchini. Mix until smooth.
- Fold in a handful of chopped fresh herbs.
- Heat a skillet over medium heat and add olive oil. Wait until the oil is hot.
- Drop heaping tablespoons of batter into the skillet and cook for 3-4 minutes on each side.
- Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
