Step-by-Step Instructions
  1. Wash 2 medium zucchinis and grate them using a box grater. Place in a bowl, sprinkle with salt, and let sit for 10-15 minutes.
  2. Squeeze out the moisture from the zucchini and transfer to a clean mixing bowl.
  3. Add the egg, flour, Parmesan cheese, minced garlic, black pepper, and paprika to the zucchini. Mix until smooth.
  4. Fold in a handful of chopped fresh herbs.
  5. Heat a skillet over medium heat and add olive oil. Wait until the oil is hot.
