- Carefully crack the eggs over the crispy feta, making sure to keep the yolks intact.
- Sprinkle the dried oregano, salt, and pepper over the eggs.
- Cover the skillet with a lid and cook for 3-5 minutes, or until the egg whites are set but the yolks are still runny.
- Remove from heat and garnish with chopped parsley before serving.
