- Cook the waffle fries according to package instructions until crispy and golden-brown, about 20-25 minutes at 425°F.
- In a medium bowl, whisk together olive oil, lemon zest and juice, garlic powder, oregano, parsley, salt, black pepper, and red pepper flakes. Refrigerate for at least 30 minutes.
- Spread crispy fries on a baking sheet, sprinkle mozzarella and half of the feta cheese, then broil for about 5 minutes until cheese is melted.
- Drizzle the chilled lemon herb sauce over the fries, top with remaining feta, and serve hot.
