  • 2 pcs Eggs Flax eggs won’t provide the same effect.
  • 1 cup Whole Wheat Breadcrumbs Gluten-free breadcrumbs can be used.
  • 1 tsp Black Pepper Fresh ground is best.
  • 1 tsp Dried Basil Fresh herbs can enhance flavor.
  • 1 tsp Dried Parsley Fresh herbs can enhance flavor.
For the Toppings
  • 1/2 cup Grated Parmesan Cheese Dairy-free parmesan is untested.
  • 1 cup Shredded Mozzarella Fresh mozzarella is recommended.
  • 1 cup Marinara Sauce Homemade sauce is healthier.

Method
 

Preparation
  1. Butterfly and gently pound the chicken breasts to about ¼ inch thickness, then slice them into cutlets.
  2. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  3. Set up three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with breadcrumbs mixed with parmesan, pepper, basil, and parsley.
  4. Coat each chicken cutlet in flour, then dip in eggs, and press into the breadcrumb mixture.
  5. Place the breaded cutlets on the prepared baking sheet and bake for 15 minutes, flip, and bake for an additional 15 minutes.
  6. Remove from oven, spoon marinara sauce over each cutlet, sprinkle with mozzarella, and broil for 2 minutes until bubbly.
