- Butterfly and gently pound the chicken breasts to about ¼ inch thickness, then slice them into cutlets.
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Set up three shallow bowls: one with whole wheat flour, one with whisked eggs, and one with breadcrumbs mixed with parmesan, pepper, basil, and parsley.
- Coat each chicken cutlet in flour, then dip in eggs, and press into the breadcrumb mixture.
- Place the breaded cutlets on the prepared baking sheet and bake for 15 minutes, flip, and bake for an additional 15 minutes.
- Remove from oven, spoon marinara sauce over each cutlet, sprinkle with mozzarella, and broil for 2 minutes until bubbly.
