  • 2 pieces Lime Wedges Squeeze over just before serving.

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Gather your ingredients and arrange your baking sheet.
  2. Brush both sides of the corn tortillas lightly with cooking oil. Place them on a baking sheet in a single layer and bake for approximately 10 minutes until golden brown.
  3. In a mixing bowl, combine the shredded rotisserie chicken, salsa, and taco seasoning. Mix well until evenly coated.
  4. Spread a layer of black beans over each tortilla. Top with the chicken mixture, canned corn, and shredded Colby Jack cheese.
  5. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Watch closely to avoid over-baking.
  6. Let cool for a minute before garnishing with cilantro and diced tomatoes. Serve hot with lime wedges.
