Step-by-Step Instructions for Voodoo Egg Rolls
  1. In a large mixing bowl, combine the shredded chicken, cream cheese, diced sausage (if using), chopped green onions, cheddar cheese, hot sauce, and Cajun seasoning. Stir the mixture until well-blended and creamy.
  2. Take an egg roll wrapper and lay it in a diamond shape on your work surface. Place about two tablespoons of the filling near the bottom corner, fold the bottom corner over the filling, tuck in the sides, and roll it up tightly, sealing the edge with a bit of beaten egg.
  3. In a deep skillet or fryer, pour in about 2 inches of vegetable oil and heat it to 350°F (175°C).
  4. Carefully add the egg rolls to the hot oil in batches, frying for 3-4 minutes until golden brown and crispy. Use a slotted spoon to remove the rolls, letting them drain on paper towels.
