- Start by cutting 1.5 pounds of skinless boneless chicken breast into bite-sized pieces. Place the chicken evenly at the bottom of your slow cooker.
- Sprinkle the entire package of beef onion soup mix over the chicken pieces and toss gently for even distribution.
- Add 6-8 cups of broccoli florets and 1 small chopped onion on top of the seasoned chicken and spread them out evenly.
- Pour in both the 10-ounce can of cream of mushroom soup and the 10-ounce can of cream of chicken soup, and stir until all ingredients are coated.
- Sprinkle 1.5 cups of shredded cheddar cheese over the top of the mixture.
- Cover the slow cooker and set it to cook on LOW for 6 hours or HIGH for 4 hours.
- Once cooking time is up, uncover the slow cooker and add the remaining 0.5 cup of shredded cheddar cheese on top, then cover for about 5 minutes.
