For the Chicken
  • 1.5 pounds skinless boneless chicken breast cut into bite-sized pieces
  • 1 package beef onion soup mix can substitute with any onion soup mix
For the Vegetables
  • 6-8 cups broccoli packed with nutrients
  • 1 small onion chopped; can substitute with shallots or omit
For the Sauce
  • 10 ounce can cream of mushroom soup can substitute with cream of chicken
  • 10 ounce can cream of chicken soup or use an extra can of mushroom
For the Cheesy Flavor
  • 2 cups shredded cheddar cheese can use a blend with mozzarella or pepper jack

Method
 

Step‑by‑Step Instructions
  1. Start by cutting 1.5 pounds of skinless boneless chicken breast into bite-sized pieces. Place the chicken evenly at the bottom of your slow cooker.
  2. Sprinkle the entire package of beef onion soup mix over the chicken pieces and toss gently for even distribution.
  3. Add 6-8 cups of broccoli florets and 1 small chopped onion on top of the seasoned chicken and spread them out evenly.
  4. Pour in both the 10-ounce can of cream of mushroom soup and the 10-ounce can of cream of chicken soup, and stir until all ingredients are coated.
  5. Sprinkle 1.5 cups of shredded cheddar cheese over the top of the mixture.
  6. Cover the slow cooker and set it to cook on LOW for 6 hours or HIGH for 4 hours.
  7. Once cooking time is up, uncover the slow cooker and add the remaining 0.5 cup of shredded cheddar cheese on top, then cover for about 5 minutes.
  8. Serve your Cheesy Crockpot Chicken and Broccoli over rice or egg noodles.
