  • 1 Egg
  • 1 cup Diced Granny Smith Apples Pat dry to avoid excess moisture
  • 2 tbsp Concentrated Apple Juice
For the Frosting
  • 4 oz Cream Cheese Softened
  • ¼ cup Butter Softened
  • 2 cups Powdered Sugar Sift for smoother finish

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt 2 tablespoons of butter in a saucepan over medium heat; stir in flour, sugar, salt, and cinnamon until golden brown.
  3. In a mixing bowl, cream together ½ cup softened butter, ½ cup brown sugar, and ¼ cup granulated sugar until fluffy. Mix in egg and apple juice.
  4. Whisk together 2 cups flour, 1 teaspoon baking soda, 1 teaspoon baking powder, and spices in a separate bowl; gradually combine with wet mixture.
  5. Fold in 1 cup diced apples, then scoop about ¼ cup of dough for each cookie onto the baking sheet.
  6. Bake for 12 minutes until edges are set, cool on the tray for 5 minutes, then transfer to a wire rack.
  7. In another bowl, beat together 4 ounces cream cheese and ¼ cup butter; gradually add 2 cups powdered sugar and caramel sauce until fluffy.
  8. Once cookies are cool, frost generously and top with reserved apples, streusel, and more caramel to serve.
