Ingredients
  

  • 2 cups chopped romaine lettuce
  • 1 cup chopped green cabbage
  • 1 cup shredded carrots
  • 1 cup diced cucumber
  • 1 cup diced red bell pepper
  • 1 cup edamame shelled and cooked
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1 tablespoon honey
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic minced
  • 1 teaspoon sriracha optional for heat

Method
 

  1. In a large bowl, combine the chopped romaine lettuce, green cabbage, shredded carrots, diced cucumber, diced red bell pepper, edamame, chopped green onions, and chopped cilantro. Toss gently to mix the vegetables evenly.
  2. In a separate bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, minced garlic, and sriracha (if using) until well combined.
  3. Drizzle the dressing over the salad and toss to coat all the ingredients evenly.
  4. Sprinkle sesame seeds on top of the salad before serving.
  5. For the best flavor, let the salad sit for about 10 minutes to allow the dressing to soak in.
