Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and gather your baking dish.
  2. Wash and peel the Yukon Gold potatoes, then slice them thinly to about 1/8 inch thick.
  3. In a saucepan, melt the butter and stir in the flour to create a roux. Cook for about 2 minutes.
  4. Gradually whisk in the milk and stir until thickened, about 5 minutes. Remove from heat and add the cheeses, stirring until smooth.
  5. Layer the sliced potatoes in a baking dish, add cheese sauce between layers until all ingredients are used.
  6. Sprinkle breadcrumbs evenly over the top layer of cheese sauce.
  7. Cover with aluminum foil and bake for 45 minutes. Remove foil and bake uncovered for an additional 15-20 minutes until golden brown.
  8. Let the dish rest for 10 minutes before garnishing with chives and serving.
