  • 8 ounces cream cheese full-fat recommended
  • 1 cup canned pumpkin puree
  • 1 can sweetened condensed milk
  • 1 teaspoon pumpkin pie spice
Coating and Decoration Ingredients
  • 1 ½ cups of graham cracker crumbs use almond flour for gluten-free
  • ½ cup white chocolate chips can swap with dark chocolate
  • ½ cup granulated sugar for rolling
  • ¼ cup mini chocolate chips for decoration
  • 1 drop orange food coloring optional

Method
 

Truffle Preparation
  1. In a skillet over medium heat, melt the butter and cream cheese until creamy and smooth, about 2-3 minutes. Stir in the pumpkin puree, sweetened condensed milk, and pumpkin pie spice until everything is well combined and thickened, approximately 5 minutes.
  2. Remove from heat and gently fold in graham cracker crumbs and white chocolate chips until fully incorporated.
  3. Spread the mixture onto a greased baking sheet, refrigerate for at least 2 hours until firm.
  4. Scoop out portions and roll into 1-inch truffles, smoothing them into shape.
  5. Roll each truffle in granulated sugar for a sparkling finish.
  6. Using a toothpick, press ridges on top and decorate with a mini chocolate chip.
  7. Store in an airtight container or serve immediately.
