- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together 2 1/2 sticks of softened butter and 2 cups of sugar until light and fluffy.
- Add in 2 room temperature eggs one at a time and then pour in 2 1/2 teaspoons of vanilla extract; mix until combined.
- Sift together 2 cups of all-purpose flour, 3/4 cup of cocoa powder, 1 teaspoon of baking soda, and 1/4 teaspoon of salt. Gradually mix into wet ingredients until just combined.
- Fold in 2 cups of white chocolate chips and 1 1/2 cups of semisweet chocolate chips until evenly distributed.
- Scoop out dough onto the lined baking sheet, leaving space between each scoop. Bake for about 8 minutes, until edges are firm and centers are soft.
- Remove cookies from the oven and let cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
