Preparation
- Preheat your oven to 350°F (175°C). Grease a loaf pan thoroughly to prevent sticking.
- In a medium bowl, whisk together the all-purpose flour, cinnamon, nutmeg, salt, and baking powder until well combined.
- In a large mixing bowl, whisk together the eggs, sugar, vegetable oil, applesauce, and vanilla extract until fully combined and smooth.
- Gradually add the prepared dry ingredients into the wet mixture, stirring gently until just incorporated.
- Gently fold in the finely chopped peeled apples and half of the toasted pecans.
- Pour the batter into the greased loaf pan, smoothing the top with a spatula. Mix the remaining pecans with sugar and a pinch of cinnamon, then sprinkle on top.
- Place your loaf pan in the preheated oven and bake for 55-60 minutes, checking for doneness.
- Once baked, remove the bread from the oven and allow it to cool in the pan for about 10-15 minutes before inverting it onto a wire rack.
