Preparation
  1. Preheat your oven to 350°F (175°C). Grease a loaf pan thoroughly to prevent sticking.
  2. In a medium bowl, whisk together the all-purpose flour, cinnamon, nutmeg, salt, and baking powder until well combined.
  3. In a large mixing bowl, whisk together the eggs, sugar, vegetable oil, applesauce, and vanilla extract until fully combined and smooth.
  4. Gradually add the prepared dry ingredients into the wet mixture, stirring gently until just incorporated.
  5. Gently fold in the finely chopped peeled apples and half of the toasted pecans.
  6. Pour the batter into the greased loaf pan, smoothing the top with a spatula. Mix the remaining pecans with sugar and a pinch of cinnamon, then sprinkle on top.
  7. Place your loaf pan in the preheated oven and bake for 55-60 minutes, checking for doneness.
  8. Once baked, remove the bread from the oven and allow it to cool in the pan for about 10-15 minutes before inverting it onto a wire rack.

Use Granny Smith apples for the best balance of sweet and tart flavors. Avoid over-mixing to keep your bread light and fluffy. Experiment with add-ins like chocolate chips or different nuts.
