  1. Wash and thinly slice an apple, laying the slices on a cutting board.
  2. In a medium saucepan, add apple slices, apple juice, brown sugar, water, vanilla extract, and apple pie spice. Heat over low heat for 3-4 minutes.
  3. Increase heat to medium and let it boil, then cover and reduce to low for 15 minutes.
  4. Carefully strain the syrup into a mason jar, discarding apple slices. Let cool for about 10-15 minutes.
  5. In a glass filled with ice, pour 2-3 tablespoons of apple syrup and 1 cup of cold brew coffee, stirring to mix.
