For the Muffins
  • 1 cup Pumpkin Puree Can substitute with applesauce.
  • 1 cup Nutella Or any chocolate hazelnut spread.
  • 1.5 cups All-Purpose Flour Or a gluten-free flour blend.
  • 0.75 cup Sugar Can substitute with sugar alternative.
  • 1 tbsp Baking Powder
  • 0.5 tsp Baking Soda
  • 1 tsp Cinnamon
  • 0.5 tsp Nutmeg
  • 0.5 tsp Salt
  • 2 large Eggs At room temperature.
For the Topping
  • 0.25 cup Additional Nutella Dollop on top before baking.

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it well.
  2. In a large bowl, mix pumpkin puree, Nutella, sugar, and eggs until smooth and creamy.
  3. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt, then add to wet ingredients and fold gently.
  4. Spoon the batter into the muffin tin, filling about two-thirds full, and add a dollop of Nutella on top of each.
  5. Use a toothpick to create swirls of Nutella in the batter.
  6. Bake for 22-25 minutes, until a toothpick comes out clean.
  7. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
