Ingredients
  

For the Sausage
  • 1 pound Italian Sausage choose sweet or spicy
For the Vegetables
  • 2 cups Bell Peppers sliced; mix of colors
  • 1 cup Red Onion sliced; can substitute with yellow onion
  • 2 cups Broccoli Florets frozen works as well
  • 1 piece Zucchini sliced; can substitute with yellow squash or eggplant
  • 2 cups Baby Potatoes halved; Yukon gold or red potatoes work
For Roasting
  • 4 tablespoons Olive Oil substitute with avocado oil if desired
  • 2 teaspoons Garlic Powder or use 1 clove of fresh garlic
  • 1 teaspoon Onion Powder omit if using fresh onion
  • 1 teaspoon Paprika smoked paprika enhances richness
  • Salt and Pepper to taste
For Garnish
  • Fresh Parsley for garnish, optional

Method
 

Steps
  1. Preheat your oven to 400°F (200°C).
  2. Wash and slice your bell peppers, red onion, broccoli florets, and zucchini. Halve the baby potatoes.
  3. Cut the Italian sausage into bite-sized pieces and add to the vegetable bowl.
  4. Drizzle olive oil over the mixture, then sprinkle garlic powder, onion powder, paprika, salt, and pepper. Toss until well coated.
  5. Spread the sausage and vegetable mixture in a single layer on a large sheet pan.
  6. Bake for 30-35 minutes, stirring halfway through, until sausages are cooked and veggies are tender.
  7. Remove from oven, let cool for a minute, then garnish with parsley and serve warm.
