Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease two muffin pans with nonstick cooking spray.
  2. In a large mixing bowl, cream together butter and granulated sugar until light and fluffy, about 3-4 minutes. Then, add in the egg, vanilla extract, and almond extract, mixing well.
  3. In a separate bowl, whisk together the flour, baking powder, and baking soda. Gradually incorporate this dry mixture into the wet dough, stirring until just combined.
  4. Press about 2 tablespoons of the dough into each muffin cup, pushing it halfway up the sides.
  5. Bake for 12 minutes or until edges are lightly golden. Allow to cool in the pan for 15 minutes, then gently press the center of each cup.
  6. Beat cream cheese and butter until creamy. Gradually add powdered sugar and milk until desired consistency is reached.
  7. Pipe or spoon frosting into each cool cookie cup, finishing with colorful sprinkles on top.
