  • 1 pound Boneless Chicken Thighs or Breasts
  • 1 cup Soy Sauce or gluten-free tamari
  • 2 tablespoons Brown Sugar or honey/coconut sugar
  • 1 cup Coconut Milk or low-fat coconut milk
  • 2 teaspoons Curry Powder
  • 3 cloves Minced Garlic fresh garlic recommended
  • 2 tablespoons Lime Juice or lemon juice
  • 8 each Skewers Bamboo or Metal; soak bamboo skewers
For the Peanut Sauce
  • 1 cup Creamy Peanut Butter natural preferred
  • 2 tablespoons Honey or maple syrup/agave
  • 1 teaspoon Chili Paste optional, adjust for spice

Method
 

Preparation Steps
  1. Prepare Chicken: Cut the boneless chicken thighs into thin strips, about 1 inch wide.
  2. Marinate: Whisk together soy sauce, brown sugar, coconut milk, curry powder, minced garlic, and lime juice. Add chicken strips and coat them. Marinate in the fridge for at least 30 minutes.
  3. Soak Skewers: If using bamboo skewers, soak them in water for at least 15 minutes.
  4. Make Peanut Sauce: In a saucepan over low heat, combine peanut butter, soy sauce, lime juice, honey, minced garlic, and coconut milk. Stir until smooth.
  5. Assemble Skewers: Thread the marinated chicken onto the skewers, leaving space between pieces.
  6. Preheat Grill: Preheat your grill to medium-high heat (about 375°F).
  7. Cook Chicken: Grill skewers for 4-5 minutes per side until golden char and internal temp reaches 165°F.
  8. Serve: Remove from grill and let rest for a couple of minutes, serve with peanut sauce.
  9. Garnish: Consider garnishing with sesame seeds or freshly chopped cilantro.
