Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare baking sheets with parchment or oil.
  2. Slice the eggplant into ½ inch rounds, sprinkle with salt, and let sit for 15 minutes.
  3. Roast the salted eggplant slices for 20-25 minutes until tender and golden.
  4. Sauté onions in olive oil until translucent, then add garlic and mushrooms, cooking until tender.
  5. Mix ricotta with egg, Parmesan, and herbs until smooth to prepare the cheese mixture.
  6. Layer marinara, eggplant, ricotta mixture, and mushrooms in a baking dish. Repeat layers.
  7. Top with mozzarella cheese and cover with foil. Bake at 375°F (190°C) for 30 minutes.
  8. Remove foil and bake an additional 10-15 minutes until the cheese is bubbly and golden.
