Preparation
  1. Begin by placing a nonstick skillet over medium heat. Add 1 tablespoon of unsalted butter and let it melt until it becomes bubbly and fragrant, about 1 minute.
  2. Crack 4 large eggs directly into the skillet, gently poke the yolks, and sprinkle spices, salt, and black pepper.
  3. Place 2 split English muffins cut-side down onto the uncooked eggs and cook for 2-3 minutes until lightly browned.
  4. Gently flip the entire egg-muffin assembly and place slices of cheese on top. Fold edges of eggs over muffins.
  5. Add remaining tablespoon of butter and toast sandwiches for about 2 minutes on each side until golden brown and cheese has melted.
  6. Carefully remove the sandwiches from the skillet and serve hot.
