For the Granola Topping
  • 1 cup Granola Mixture a blend of nuts and coconut (almonds, cashews)
  • 3 tablespoons Coconut Oil melted; may substitute with melted butter

Method
 

Step‑by‑Step Instructions
  1. In a food processor, combine the chickpeas, almond butter, honey (or maple syrup), and a pinch of salt. Blend until smooth, about 1-2 minutes.
  2. Fold in mini chocolate chips with a spatula until evenly distributed.
  3. Transfer the mixture into an 8x8 inch baking pan lined with parchment paper, pressing it firmly into the bottom.
  4. In a separate bowl, mix the nuts and shredded coconut with melted coconut oil and an additional drizzle of honey.
  5. Spread and press the granola mixture over the cookie dough base.
  6. Place in the freezer for at least 1 hour to firm up.
  7. After an hour, slice into bars and enjoy!
