Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a 1-lb loaf pan with parchment paper.
  2. Pour apple cider into a saucepan and simmer until reduced to ½ cup, about 15-20 minutes. Let cool.
  3. Cream butter and brown sugar in a mixer on medium speed for about 3 minutes until fluffy.
  4. Add vanilla and eggs one at a time, mixing well after each addition.
  5. Mix the reduced cider with applesauce in a separate bowl until well combined.
  6. Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in another bowl.
  7. Gradually add dry ingredients to the butter mixture, alternating with cider and applesauce mixture, mixing gently.
  8. Transfer batter to the prepared pan and smooth the top.
  9. Mix sugar and cinnamon for the topping and sprinkle over the batter.
  10. Bake for 40-45 minutes until a toothpick comes out mostly clean. Let cool for 10 minutes in the pan.
  11. Lift the bread out using parchment overhang and cool on a wire rack completely before slicing.
