- Preheat your oven to 350°F (175°C) and line a 1-lb loaf pan with parchment paper.
- Pour apple cider into a saucepan and simmer until reduced to ½ cup, about 15-20 minutes. Let cool.
- Cream butter and brown sugar in a mixer on medium speed for about 3 minutes until fluffy.
- Add vanilla and eggs one at a time, mixing well after each addition.
- Mix the reduced cider with applesauce in a separate bowl until well combined.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in another bowl.
- Gradually add dry ingredients to the butter mixture, alternating with cider and applesauce mixture, mixing gently.
- Transfer batter to the prepared pan and smooth the top.
- Mix sugar and cinnamon for the topping and sprinkle over the batter.
