- Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper.
- Add fresh egg whites to the mixing bowl and beat on medium speed until soft peaks form, about 2-3 minutes.
- Gradually add granulated sugar and cream of tartar while continuing to whip until stiff peaks form.
- Gently fold in vanilla extract, then pipe small dollops onto the lined baking sheet forming ghost shapes.
- Bake in the preheated oven for 1.5 to 2 hours until dry to the touch.
- Allow to cool inside the oven for about 30 minutes, then decorate with melted chocolate or chocolate chips.
- Serve the meringues on a platter with whipped cream if desired.

Using fresh, room temperature egg whites will give the best volume. Do not skip cream of tartar to stabilize the meringue.
