- Preheat your oven to 300°F (150°C) and prepare baking sheets with parchment paper.
- In a heatproof bowl, combine the Domino® Golden Sugar and egg white powder, heat until sugar dissolves. Whip egg whites until stiff peaks form.
- Sift together powdered sugar and almond flour, fold into whipped meringue and add gel food coloring.
- Pipe small circles onto baking sheets, rest for 30 minutes, then tap to remove air bubbles.
- Bake for 15-20 minutes until the macaron shells are firm yet soft inside.
- Prepare royal icing by mixing powdered sugar, meringue powder, and enough water to reach piping consistency.
- Decorate cooled macaron shells with royal icing for Santa's belt and buckle.
- For filling, mix heat-treated flour, butter, extracts until creamy, then add milk to adjust consistency.
- Pipe buttercream onto half of the shells and sandwich with the other half, optionally rolling edges in desiccated coconut.
