Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine 1 cup of Greek yogurt with ½ cup of crumbled feta cheese. Mix until smooth and creamy, about 2-3 minutes.
  2. Slice 2-3 English cucumbers thinly, about ¼ inch thick, and add them into the bowl with the yogurt-feta spread. Chop a handful of fresh herbs and mix with the cucumbers and spread.
  3. Take 4 slices of whole-grain bread and spread the cucumber-herb mixture evenly on two slices.
  4. Place the remaining slices of bread on top of the spread to form sandwiches. Cut into halves or quarters for serving.
