- Preheat your oven to 375°F (190°C) and coat a 9x13 inch baking dish with olive oil.
- In a large skillet, heat a tablespoon of olive oil over medium heat, add chopped onion and minced garlic, and sauté for about 2 minutes.
- Add the ground turkey to the skillet, break it apart with a wooden spoon, and cook for 5-6 minutes until browned.
- Stir in diced tomatoes, dried herbs, salt, and black pepper; let simmer for 3-4 minutes.
- Layer half of the sliced zucchini in the baking dish, then half of the turkey mixture and half of the mozzarella cheese.
- Repeat the layering process with remaining zucchini, turkey, and cheese.
- Bake uncovered for 30-35 minutes until cheese is melted and edges are bubbling.
- Allow to cool for about 5 minutes before serving.
