  • 1 pound Ground Turkey can substitute with ground chicken or beef
  • 2 medium Zucchini or yellow squash/eggplant
  • 2 cups Shredded Mozzarella Cheese can use cheddar or gouda
  • 1 medium Chopped Onion or shallots/leeks
  • 2 cloves Minced Garlic fresh preferred, garlic powder as substitute
  • 14.5 ounces Diced Tomatoes canned or fresh
  • 1 teaspoon Dried Italian Herbs fresh herbs for a brighter taste
  • 1 teaspoon Salt adjust to taste
  • 1 teaspoon Black Pepper or red pepper flakes for spice
  • 1 tablespoon Olive Oil can substitute with avocado oil

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and coat a 9x13 inch baking dish with olive oil.
  2. In a large skillet, heat a tablespoon of olive oil over medium heat, add chopped onion and minced garlic, and sauté for about 2 minutes.
  3. Add the ground turkey to the skillet, break it apart with a wooden spoon, and cook for 5-6 minutes until browned.
  4. Stir in diced tomatoes, dried herbs, salt, and black pepper; let simmer for 3-4 minutes.
  5. Layer half of the sliced zucchini in the baking dish, then half of the turkey mixture and half of the mozzarella cheese.
  6. Repeat the layering process with remaining zucchini, turkey, and cheese.
  7. Bake uncovered for 30-35 minutes until cheese is melted and edges are bubbling.
  8. Allow to cool for about 5 minutes before serving.
