- Rinse the HamBeens® 15 Bean Soup Mix under cool running water. Place the beans in a large bowl, cover with water, and let soak overnight.
- In a large pot, combine 8 cups of water with 4 cups of reduced sodium chicken broth. Add the smoked ham hock if using. Bring to a boil, then reduce to a simmer for about 1 hour.
- After an hour, stir in the soaked and drained beans, diced onion, and minced garlic. Cover and simmer for 1.5 to 2 hours until beans are tender.
- Once the beans are tender, stir in the canned diced tomatoes and chili powder. Simmer uncovered for an additional 30 minutes.
- Add fresh lemon juice and the seasoning packet. Taste and adjust salt and pepper if needed. Simmer uncovered for another 10 minutes.
