- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, whisk together the sugar, salt, ground cinnamon, ground ginger, and ground cloves.
- In a separate bowl, beat the large eggs until smooth and slightly frothy. Gradually add to the sugar-spice mixture.
- Stir in the pumpkin puree and then add evaporated milk, mixing until smooth.
- Pour the filling into your unbaked 9-inch pie shell, filling to just below the rim.
- Bake at 425°F for 15 minutes, then reduce to 350°F (175°C) and continue baking for 40-50 minutes.
- Once baked, remove from the oven and cool on a wire rack for at least 2 hours.
