  • 2 tablespoons olive oil can be replaced by vegetable or sesame oil
  • 2 cloves garlic (minced) fresh garlic is best for taste
  • 8 ounces shiitake or brown mushrooms button mushrooms can be used if shiitakes aren’t available
  • 14 ounces extra firm tofu cut into strips
  • 2 cups baby bok choy or choy sum can use spinach or kale as alternatives
  • 3 tablespoons soy sauce tamari is gluten-free
  • 1 tablespoon balsamic vinegar or black rice vinegar apple cider vinegar can be substituted
  • 1 pinch ground black pepper use fresh cracked for better flavor
  • 1 teaspoon sesame oil sparingly for a stronger taste
  • 1 tablespoon sesame seeds for garnish

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet or wok over medium-high heat for 1-2 minutes until hot.
  2. Add 2 cloves of minced garlic, stirring for about 30 seconds until fragrant and lightly golden.
  3. Incorporate 8 ounces of sliced shiitake or brown mushrooms, cooking for about 3-5 minutes until tender and browned.
  4. Gently stir in 14 ounces of extra firm tofu cut into strips and cook for about 3 minutes until slightly golden.
  5. Add 2 cups of chopped baby bok choy or choy sum, cooking for 2 minutes until wilted yet vibrant.
  6. Pour in 3 tablespoons of soy sauce, 1 tablespoon of balsamic vinegar, and a pinch of ground black pepper, stirring for an additional minute.
  7. Drizzle in 1 teaspoon of sesame oil and stir to combine, then remove from heat.
  8. Serve over steamed rice or quinoa, garnished with sesame seeds.
