Method
 

Coffee Cake Muffin Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your muffin tin with liners or greasing.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon until well blended.
  3. In a separate bowl, mix melted butter, milk, eggs, and vanilla until smooth.
  4. Pour the wet mixture into the dry ingredients and fold until just combined.
  5. In a small bowl, mix flour, brown sugar, and cinnamon for the streusel, then cut in cold butter until crumbly.
  6. Fill muffin tins 2/3 full with batter and sprinkle streusel topping over each muffin.
  7. Bake for 18-22 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool in the tin for 5 minutes before transferring to a wire rack.
