Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather all your ingredients and prepare your casserole dish.
  2. In a large skillet, heat about two tablespoons of olive oil over medium heat. Add the chicken pieces and brown them for 6-8 minutes.
  3. Remove the chicken and set aside. In the same skillet, sauté the onions and minced garlic until soft, about 3 minutes, then add mushrooms and sauté for another 4-5 minutes.
  4. Sprinkle in fresh thyme and pour in chicken broth, scraping up any brown bits. Simmer for about 5 minutes, then return the chicken.
  5. Stir in heavy cream and let it simmer for an additional 2-3 minutes, then transfer to the casserole dish.
  6. If using, sprinkle breadcrumbs over the top. Bake for 30-35 minutes until golden brown.
  7. Let the casserole rest for 5-10 minutes before serving.
