- Start by finely mincing one red onion and an optional clove of garlic. Place the minced aromatics in a small mason jar.
- Add a tablespoon of coconut sugar and a tablespoon of dried dill into the mason jar. Stir to combine.
- Pour in 1/2 cup of olive oil and 1/4 cup of white vinegar into the jar. Mix well.
- Season to taste with sea salt and fresh ground pepper.
- Secure the lid tightly on the mason jar and shake vigorously for about 30 seconds.
