Step‑by‑Step Instructions
  1. Start by preparing your ingredients for the Garlic Butter Beef Bites & Potatoes. Cut the beef stew meat into bite-sized pieces and place it in a large bowl. Halve the baby potatoes.
  2. Heat 1-2 tablespoons of olive oil in a skillet over medium-high heat. Add the beef pieces in a single layer and sear for about 3-4 minutes on each side until browned. Transfer to the slow cooker.
  3. In a separate bowl, melt ½ cup of unsalted butter. Stir in the minced garlic, onion powder, smoked paprika, dried thyme, rosemary, salt, and black pepper until combined.
  4. In the slow cooker, layer the halved baby potatoes followed by the seared beef pieces. Drizzle the garlic butter sauce over the beef and potatoes, then pour in 1-2 cups of beef broth.
  5. Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender and the potatoes are soft.
  6. Once cooking is complete, let the dish rest for about 10 minutes before serving warm.
