Ingredients

  • 2 6-ounce salmon fillets
  • 1 pound asparagus trimmed
  • 3 tablespoons unsalted butter melted
  • 3 cloves garlic finely chopped
  • 1 lemon juiced and zested
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste
  • Lemon wedges for garnish

Method

  1. Preheat your oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the melted butter, chopped garlic, lemon juice, lemon zest, dried oregano, salt, and black pepper until well combined.
  3. Arrange the salmon fillets on one half of the baking sheet, placing the asparagus on the other half.
  4. Spoon half of the garlic lemon butter mixture over the salmon, ensuring it’s well coated, and pour the remaining mixture over the asparagus, tossing it gently to ensure even coverage.
  5. Place the baking sheet in the oven and bake for 12-15 minutes, or until the salmon is flaky and the asparagus is bright green and tender.
  6. Once cooked, take it out of the oven and serve immediately with lemon wedges on the side for an extra burst of flavor.
