Step-by-Step Instructions
  1. In a medium saucepan, combine 3 cups of water with 1 cup of mango nectar, ½ cup of granulated sugar, 2 tablespoons of dragonfruit powder, and 1 teaspoon of citric acid. Heat over low heat, whisking constantly for about 5 minutes until the sugar and dragonfruit powder dissolve completely. Remove from heat and allow the mixture to cool before transferring it to a jar to store in the fridge.
  2. In a small jar, combine ½ cup of barista-style oat milk, ¼ cup of strawberry syrup, and ¼ cup of soy milk. Use a frother or a handheld whisk to whip the mixture until it becomes pale and fluffy, which should take about 2-3 minutes. Once frothy, set the strawberry cold foam aside.
  3. Take a cocktail shaker and fill it with ice. Pour in ½ cup of the refresher base, followed by ½ cup of sweetened coconut milk and 1 tablespoon of freeze-dried dragonfruit powder. Secure the lid and shake vigorously for 15-20 seconds until well combined and chilled.
  4. Strain the pink mixture into a tall glass filled with ice. If desired, stir in additional freeze-dried dragonfruit pieces for extra texture. Spoon the strawberry cold foam on top, and finish off with a sprinkle of pink and green sprinkles.
