Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  2. In a bowl, combine softened butter and peanut butter. Beat with an electric mixer for about 2–3 minutes until smooth.
  3. Add granulated and brown sugars, and beat for another 2–3 minutes until the mixture is light and fluffy.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients.
  6. Scoop tablespoon-sized portions of dough and roll them into balls. Place on baking sheets and crisscross with a fork.
  7. Bake for 10–12 minutes until edges are light golden brown. Remove and let cool for 5 minutes before transferring to a wire rack.
