Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 whole wheat sandwich rolls
  • 1 ripe avocado sliced
  • 1 cup lettuce such as romaine or spinach
  • 1 medium tomato sliced
  • 1/4 cup mayonnaise
  • 1 teaspoon chipotle sauce adjust to taste
  • 1 teaspoon lime juice

Method
 

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a small bowl, mix together the garlic powder, onion powder, smoked paprika, salt, and black pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
  3. Drizzle olive oil over the chicken breasts and place them on the grill. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F. Remove from the grill and let rest for 5 minutes.
  4. While the chicken is resting, in a separate bowl, combine mayonnaise, chipotle sauce, and lime juice to create the chipotle mayo.
  5. Slice the sandwich rolls in half and toast them lightly on the grill for 1-2 minutes, cut side down.
  6. Assemble the sandwiches by spreading a generous amount of chipotle mayo on the bottom half of each roll. Layer with lettuce, sliced grilled chicken, avocado, and tomato. Top with the other half of the roll.
  7. Serve immediately and enjoy!
