In a mixing bowl, combine the olive oil, soy sauce, maple syrup, onion powder, ground turmeric, salt, and pepper. Stir until well blended.
Place the salmon fillets in a shallow dish and pour the marinade over them, ensuring they are thoroughly coated. Allow the salmon to marinate for at least 20 minutes for maximum flavor.
While the salmon is soaking up the flavors, lightly brush the pineapple rings with a bit of olive oil to prevent sticking.
Once the grill is ready, lay the salmon fillets skin-side down on the grates. Grill for approximately 5-6 minutes, then gently flip and cook for another 5-6 minutes, or until the salmon is opaque and flakes easily with a fork.
At the same time, grill the pineapple rings for about 3-4 minutes on each side, until they are beautifully caramelized and have distinct grill marks.
After grilling, take the salmon and pineapple off the grill. Serve the salmon topped with the grilled pineapple and sprinkle with fresh mint or basil if you like.
